To make the frosting combine the egg whites and 1/3 cup of the sugar together in a mixer and then add the vanilla extract. Combines remaining sugar and water in a medium sauce pan which you stir constantly over medium heat until the sugar is dissolved and the new sugar syrup is bubbling. Meanwhile beat the eggwhite mixture on medium until very soft peaks form in the bowl. Increase the mixer speed to high and slowly pour in the sugar syrup also known as simple syrup. Beat until this meringue forms stiff peaks in the mixture. All this to cool until lukewarm but do not beat during this time. Once cooled beat again at medium speed and slowly add the butter a few tbsp. at a time and continue beating until the buttercream is nice and smooth. If the butter cream begins to look broken or curdled place the bowl over medium heat on the stove and whisk for 10 seconds to warm it up and then remove it from the heat and whisk vigorously and repeat until it comes together smooth again. You can now frost the cake so that you frost in between each layer, on top and all the sides. It is a very rich cake and a real crowd pleaser.
